Hot Chicken Sandwich

Hot Chicken Sandwich

Ingredients
6 thick sliced rye bread or whole wheat bread
Butter for the bread
1 chicken, freshly cooked
3 slices of bacon, fried and crushed
1 ripe avocado, peeled and cut into thin slices
6 tablespoon French dressing
Chopped chives, parsley or chervil
Salt and pepper
Sauce
(optional):
3 tablespoons mango chutney
3 tablespoons mayonnaise flavored with lemon juice

Approach

[1] Lightly toast the bread and butter it. Peel the crispy skin off the chicken while it is hot. Chop it and spread on the bread slices. Cut the meat from the bones into large strips and place it over the skin. Add crushed bacon and avocado slices on top. Drizzle 1 tablespoon French dressing on each sandwich and sprinkle with herbs. Season with salt and pepper. Mix chutney and mayonnaise for the sauce.

[2] Server the sandwiches warm with crispy lettuce and the sauce, if you made it, for lunch or an evening meal.

Tip: Sesame seed rolls, pita bread or French white bread can be used instead of rye bread or whole wheat bread.
