A Norwegian recipe with spelt found on mills.no
These airy and juicy spelt patties makes any Sunday brekfast perfect. If you have a few left over, they are also great for the lunchbox. They stay nice and juicy over time. The recipe gives about 16 patties.
2 tablespoons margarine or butter
4 dl [0,8 pt] kefir
250 g [9 oz] spelt flour
3 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon of baking soda
This is what you do
 Melt the margarine/butter in a small saucepan or in a microwave oven.
 Mix the melted margarine/butter with eggs and kefir in a small bowl.
 Mix together flour, sugar, baking powder and baking soda in another bowl. Add the wet ingredients to the dry and stir well until you have a smooth and lump-free batter.
 Heat a non-stick fryingpan. Use a small sauce or icecream spoon to portion the batter and drop it in the fryingpan. Cook for the patty about 1 minute before turning and cook for about 30 seconds.
 Put the fried patties on a grid and enjoy them while still hot.
