Juicy Fruit and Nut Bread

1 package of dry yeast
1 teaspoon salt
1 dl [0,2 pt] chopped hazelnuts
1 dl [0,2 pt] dried apricots, chopped
1 dl [0,2 pt] raisins
10 dl [2 pt] flour
4 dl [0,8 pt] finely ground whole wheat
5 dl [1 pt] water
250 g [9 oz] fresh curd cheese, natural (fresh cheese)
0.5 dl [0,1 pt] rapeseed oil
0.5 dl [0,1 pt] liquid honey


[1] Mix all dry ingredients in a bowl. Save some of the flour for kneading. Warm the water until it is “finger-hot” and add it and the rest of the ingredients to the flour mixture. Knead to the dough until it becomes smooth. Raise the dough for about 30 minutes under a kitchen towel.

[2] Divide the dough into two, form two round loaves and let them rise for 30 minutes. Bake the bread for 10 minutes at 250° C / 480° F, lower the temperature to 180° C / 355° F and bake for about 30 minutes. Cool on a rack.
