Kue Apem – Indonesian Peanut and Sesame Cakes

70 g [2,5 oz] unsalted peanuts
3 tablespoons sesame seeds
5 tablespoons sugar
2 eggs
250 g [8,8 oz] plain flour
7 tablespoons baking powder
2 tablespoons peanut oil
2,5 dl [0,5 pt] milk
1,25 dl [0.25 pt] water
4 tablespoons oil for frying

Preparation time: 1 hour


[1] Grind the peanuts coarsely and put them in a dry frying pan with the sesame seeds. Fry them on a low heat for about 2 minutes while stirring constantly. Put the mixture into a bowl and stir in 4 tablespoons of sugar. Set the mixture aside.

[2] Whip the egg with 1 tablespoon sugar until fluffy. Sift together flour, baking powder and a pinch of salt. Add the eggs alternately with oil and milk. Stir to a lump-free mixture and add 1 1/4 dl water. The batter should be quite thin.

[3] Heat 1 tablespoon oil in a small frying pan over medium heat. When the pancakes has set and starts to turn brown, sprinkle with a littleof the peanut/sesame seed mixture and put on a lid. Cook for another 2-3 minutes. Fold the pancake in half and remove it from the pan. Add 1 teaspoon of oil in the pan before baking the next cake. Place the cakes in the serving dish and serve.
