Lefse Rolls

Delicious lefse with beet salad and thin slices of cold lamb is a great little Christmas snack, as an appetizer for Christmas eve or as part of the Christmas tapas table.

6 thin slices of lamb, cold
about 4 tablespoons beet salad *
2 lefse

This is what you do

Spread the lefse with beet salad and add slices of lamb. Roll them up and cut the lefse rolls in oblique “logs”.

* Beet Salad

Beet salat is a nice with pâtés. The salad also tastes great with typical Christmasy cold cuts like beef tongue and ham, and last but not least it is delicious in lefse rolls!

1 jar of pickled beets, about 500 g / 1 lb
2 green apple
1 shallot
3 tablespoons mayonnaise
3 tablespoons cream
1 teaspoon caraway
1/2 teaspoon salt
1 teaspoon sugar

This is what you do

[1] Pour out the beet brine. Cut beets, apples and challot into small cubes and put it in a bowl.

[2] Mix mayonnaise and cream and fold this into the beet mixture. Sprinkle with salt and sugar.
