Makes single-crust 9″ pie

1/2 cup sugar
1/3 cup cornstarch
1/4 teaspoon salt
1 1/4 cups CARNATlON INSTANT mixed
with 2 1/2 cups water
2 eggs
3 tablespoons butter
1/2 teaspoon vanilla
2 medium bananas
9” baked pie shell or
crumb crust made with vanilla wafers


Mix sugar, cornstarch and salt in top of double boiler. Add liquid Carnation Instant, mix well. Cook over hot water until thickened (15- 20 minutes), stirring occasionally. Add small amount hot Carnation Instant mixture to beaten eggs; mix and return to milk mixture over hot water. Cook 4-5 minutes longer. Remove from heat; stir in butter and vanilla. Cool; then pour part of filling into pie shell. Slice bananas over filling; pour remaining filling over bananas. Just before serving, top with whipped Carnation Instant.

Carnation Instant Whip

Makes 3 cups whipped topping with 2/3 less calories.

[1] Mix 1/2 cup Carnation Instant “Magic Crystals” with 1/2 cup cold water in bowl. Beat until soft peaks form (3-4 minutes). Add tablespoons lemon juice.

[2] Continue beating until stiff peaks form (3-4 minutes more). Fold in 1/4 cup sugar. Place an pie; serve at once.
