Mint Frosted Brownies

A brownie recipe found in “Hershey’s Make It Chocolate”
published by Hershey in 1987

Mint Frosted Brownies

2 eggs
1 cup sugar
1/2 cup butter or margarine, melted
1 teaspoon vanilla extract
2/3 cup all-purpose flour
6 tablespoons cocoa
12 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped walnuts (optional)
Mint Frosting (recipe follows)

Heat oven to 350 F. Grease square pan, 8x8x2 inches. In small mixer bowl beat eggs well; gradually beat in sugar. Blend in melted butter and vanilla. Combine flour, cocoa, baking powder and salt; add to egg mixture, blending thoroughly. Stir in nuts, if desired. Spread batter into prepared pan. Bake 20 to 25 minutes orjust until brownies begin to pull away from sides of pan. Cook; frost with Mint Frosting. Cut into squares when frosting is set.

Makes 16 brownies.

Mint Frosting

2 tablespoons butter or margarine, softened
1 cup confectioners’ sugar
1 to 2 tablespoons milk
1/4 teaspoon vanilla extract
1/8 teaspoon mint extract
3 to 4 drops green or red food color

In small mixer bowl combine all ingredients; beat until creamy and desired consistency.
