Cooking time: 10 – 15 min.
1 tablespoon of cream
1 tablespoon of water
6-8 medium brown champignons
1 1/2 onion
A little fresh cress or parsley
 Whisk together eggs, cream and water. Saute sliced mushrooms and onions in a pan and pour in the egg mixture. Fry the omelette on low heat until it sets.
 Top the omelet with tomato slices and garnish with cress or parsley.
Tip: To get the omelet golden on top, put the whole frying pan into the oven and cook it under the grill for a few moments.
