A classic Norwegian Christmas cookie found on mills.no
Almond macrons are typical Norwegian Christmas cookies that are relatively easy to make. They are round cookies that can be decorated with chocolate and a whole almond on top. Some also choose to use hazelnuts. The cookies have a strong taste of almond and have a relatively round, but quite uneven shape. One portion of this recipe makes about 40 cookies.
200 g [7 oz] peeled, ground almonds
200 g [7 oz] margarine or butter
400 g [14 oz] sugar
8 egg whites
80 g [3 oz] flour
This is what you do
 Scald the almond, dry them and grind them.
 Stir margarine/butter and sugar white and airy.
 Whip the egg whites stiff.
 Mix first almonds and flour. Then mix all the ingredients into a smooth dough. Place the dough with two teaspoons on a baking sheet covered with baking paper.
 Bake the cookies in the oven at 180 C / 355 F for 10-12 minutes, in the middle of the oven until the cakes are light yellow. Cool the cakes on the grid.
 Put the cookies on a tray when they are cold. Melt a little chocolate and drip half a tespoon on each macron and place half an almond on each cookie.
