Norwegian Apple Cake in Small Mould

Norwegians are crazy about apple cake and there are a lot of
different recipes for it. Here is one of them.

4 acidic apples
2 eggs
150 g [5,3 oz] sugar
50 g [1,75 oz] dairy butter
¾ dl [0,15 pt] whole milk
150 g [5,3 oz] flour
1 teaspoon baking soda
1½ teaspoons of ground cinnamon
2 dl [0,4 pt] whipped cream


[1] You need a small oven mould about  22×30 cm / 9×12 inch. Peel the apples and remove the kernels. Cut the apples into fairly thin wedges and put them in cold water. Whip egg and sugar till airy and light. Melt butter and let it cool a little. Mix the butter and milk and whip it into the egg mix. Mix flour and baking soda and stir it in.

[2] Pour the batter into a greased mould covered with baking paper. Sprinkle 1 tsp cinnamon over the batter. Take the apple wedges out of the water and place them slightly overlapping  on the batter and sprinkle with the rest of the cinnamon. Bake the apple cake in the middle of the oven at 200° C / 390° F for 30-35 minutes.

[3] Cool the cake in the mould. Cut it into squares just before serving. Serve the apple cake with whipped cream.
