A Norwegian Christmas buffet Classic

A Christmas classic for many Norwegians, but delicious all year long. Beets has been grown in Norway for a long time. Today we are almost self-sufficient with beets here. This recipe was submitted by Onsøy Associated Country Women to Norway’s Associated Country Women’s recipe relay in 2012.
500 g [1,1 lb] pickled beets
1 dl [0,2 pt] mayonnaise
1 dl [0,2 pt] cream fraiche or sour cream
1 tablespoon sweet Scandinavian mustard
1 tablespoon brown sugar or demerara
1 teaspoon salt and pepper (or to taste)
 Let the beets drain off well. Cut them into cubes.
 Stir together mayonnaise, creme fraiche/sour cream, mustard and sugar. Mix in the beets. Season with salt and pepper to taste.
 This salad tastes great with various pâtes and cold cuts.
