Norwegian Hulda Cookies

An old-fashioned cookie recipe found on
Norwegian Hulda Cookies

Hulda cookies are flat and round and made with a lot of spices, including cloves and cinnamon. Some decorate these cookies with half an almonds on top of each. A portion of this recipe gives about 50 cakes.

200 g [7 oz] margarine / butter
200 g [7 oz] sugar
3/4 dl [0,15 pt] of Golden syrup (Lyle’s or similar)
1 egg
250 g [9 oz] flour
3/4 teaspoon cinnamon
1/8 teaspoon pepper
3/4 teaspoon cloves
3/4 teaspoon cardamom
3/4 teaspoon of baking soda

This is what you do

[1] Whisk margarine/butter and sugar creamy. Stir in egg and syrup. Mix flour, spice and baking soda and sift it in. Work the dough quickly together. Let the dough rest for an hour.

[2] Roll the dough into balls and place them on the baking sheet covered with baking paper. Bake in the oven at 200 C / 390 F for about 12 minutes, in the middle of the oven. Cool the cakes on a grid. The cookies will flatten somewhat as they get cold.
