This recipe is from the book “From Great Grand Mother’s Kitchen – Food and Traditions from Østfold”, published by Østfold Associated Country Women.
A bundle of lovage leaves
75 g [2,5 oz] butter
2 medium sized onions
1 garlic clove
50 g [1,75 oz] wholemeal bread or 500 g [1 lb] potatoes
1 l [2 pt] beef or vegetable broth
1 dl [0,2 pt] cream
1 teaspoon each of salt, pepper and
grated nutmeg (taste to)
 Melt butter in a pan and saute the chopped onion and garlic until it is shiny and soft.
 Add coarsely chopped lovage, broth and crumbled bread or potatoes in small cubes.
 Bring to a boil and simmer the soup for 10-15 minutes.
 Mash the soup through a colander or use a blender until you have a smooth soup. Pour it all back into the pan and bring to a boil.
 Stir in the cream just before serving and taste with more seasoning if necessary.
 Decorate with chopped lovage or a little grated cheese. Serve with fresh bread.
