Norwegian Rice Bubbles

Norwegian rice bubbles are a simple and delicious Christmas cakes, which are guaranteed to be a favourite among the children. Why not make them together with the children, the recipe is simple and it’s quick to make.

6 tablespoons of cocoa
8 tablespoons sugar
1 dl [0,2 pt] light cream, 20%
250 g [9 oz] Copha (hydrogenated coconut oil)
2 eggs
2 teaspoons vanilla sugar / vanilla
1.5 l [3 pt] of puffed rice

This is what you do

[1] Mix the cocoa and half of the sugar in a saucepan. Add the cream and boil while stirring. Remove the saucepan from the heat and add Copha cut into pieces. Stir until Copha has dissolved.

[2] Whip eggs, the rest of the sugar and vanilla sugar/vanilla light and airy. Add the cocoa and Copha mixture a little at the time. Whip till the mass is shiny and thick. Add the puffed rice and gently mix it in with a spatula.

[3] Use two spoons and shape the mixture into small peaks. Put the rice bubbles on a baking sheets covered with baking paper or in small paper muffin moulds. Set the rice bubbles cool until they have hardened.
