Norwegian Sausage Salad

A quick and easy salad recipe found in “Cappelens Kokebok” (Cappelen’s Cook Book) utgitt i 1991
Norwegian Sausage Salad

Since we Norwegians are crazy about sausages of any kind, it is not surprising that we use them in salads as well, like here.

Preparation time 15-20 minutes
4 servings.

About 400 g [0,9 lb] sausages to taste
8-10 boiled, cold potatoes
1 egg yolk
1/4 tsp salt
1/8 tsp pepper
2 teaspoons of mustard
3/4 dl [0,15 pt] oil
1 1/2 tablespoon vinegar
1 tablespoon of water


Cut the sausages and the potatoes into slices, chop the the chives and put all in a bowl. Mix the egg yolk, salt, pepper and mustard for the dressing. Then stir in the oil, a little at a time, and finally the vinegar and water. Pour the dressing over the salad and mix carefully. Serve with bread, tomatoes and stripped lettuce and thinly sliced cucumber.
