A recipe for a lovely and a little unusual apple cake

A delicious cake – with apples sauce, apple sticks and Custard.
This cake will save the Sunday every time.
300 g [10,5 oz] butter
300 g [10,5 oz] sugar
300 g [10,5 oz] flour
1 teaspoon baking soda
Grated peel of 1 lemon
100 g [3,5 oz] almonds
1 glass/can of apple sauce
4 apples, cut into sticks and boiled in sugar syrup
 Set the oven to 175° C / 345° F.
 Stir sugar and butter light and airy. Separate the eggs. Mix egg yolks, flour, baking powder and lemon peel into the butter/sugar mix.
 Whip the egg whites into stiff foam. Carefully fold it into the butter/sugar/flour mix.
 Grease a small roasting pan and cover the bottom with baking paper. Pour half of the batter in the pan and smooth out the top. Use a tablespoon to distribute a layer of apple sauce, then add the rest of the batter on top. Spread the cake with chopped almonds and place the apple sticks on top.
 Bake the cake for about 30 minutes. Cool and cut into squares.
 Server the cake cold or lukewarm with custard and fresh berries.
