Not Lefse, Not Lompe, But Svele


4 eggs
6 tablespoons sugar 
about 500 g flour [1,1 pound]
1 tablespoon baking soda, level 
½ teaspoon salt of hartshorn
1 l kefir [2,1 pint]
2 tablespoons melted butter

[1] Whisk eggs and sugar well.

[2] Mix flour, baking soda and salt of hartshorn and add to egg/sugar mix alternately with kefir. Add the melted butter last. Let the mixture swell ½ hour before frying.

[3] spread cooled the svele with butter and sprinkle with sugar.

[4] Cut each svele in half, fold over and serve.

Svele can also be served with jam and sour cream or Norwegian goat cheese and golden syrup.
