Whisk eggs and sugar well.
 Mix flour, baking soda and salt of hartshorn and add to egg/sugar mix alternately with kefir. Add the melted butter last. Let the mixture swell ½ hour before frying.
 spread cooled the svele with butter and sprinkle with sugar.
 Cut each svele in half, fold over and serve.
Svele can also be served with jam and sour cream or Norwegian goat cheese and golden syrup.
