Oat Bran ‘n Ginger Waffles

Oat Bran 'n Ginger Waffles

Enjoy the sweet aroma of these waffles with the healthful benefit of oat bran. Top with fresh fruit.

2 egg whites
1 cup Quaker Oat Bran hot cereal, uncooked
1 cup all-purpose flour
1/2 cup sugar
1 teaspoon ginger
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon ground cloves
1/4 teaspoon salt (optional)
1 cup skim milk
3 tablespoons vegetable oil
2 tablespoons dark molasses


[1] Heat waffle iron according to manufacturer’s instructions. Beat egg whites until soft peaks form; set aside. Combine oat bran, flour, sugar, ginger, cinnamon, baking soda, baking powder, cloves and salt; mix well.

[2] Whisk milk, oil and molasses until well blended. Add to dry ingredients, mixing just until moistened. Do not overmix. Fold egg whites into batter.

[3] Pour about 1 cup batter onto surface of grid. Close the lid; bake until steam no longer escapes f r om sides of the iron and waffles are deep golden brown. Serve with fruit or Aunt Jemima Lite or ButterLite Syrup, if desired.
