Old-Fashioned Norwegian Lemon Mousse

Lemon mousse is a great old-fashioned dessert that deserves to be added to the family menu again. Easy to make and it tastes heavenly.

4 servings

4 gelatin sheets
½ dl [0,1 pt] water
3 dl [0,6 pt] cream
1 dl [0,2 pt] sugar
3 eggs
Grated peel and juice of 1½ lemon


[1] Let the gelatin soak in cold water for about 7 minutes. Squeeze out the water and melt the gelatin in a little boiling water.

[2] Whip the cream semi stiff. Whip egg and sugar light and airy. Add finely grated lemon peel.

[3] Pour the gelatin in a thick jet into the egg/sugar mix while stirring. Fold in the whipped cream and lemon juice. Taste to check if the mousse is sweet enough.

[4] Pour the mousse into serving glasses or into a glass bowl. Cover with plastic wraps and set cold for at least a couple of hours or overnight.

[5] Serve the mousse with thin strips of lemon or lime peel.
