Lemon mousse is a great old-fashioned dessert that deserves to be added to the family menu again. Easy to make and it tastes heavenly.
4 gelatin sheets
½ dl [0,1 pt] water
3 dl [0,6 pt] cream
1 dl [0,2 pt] sugar
Grated peel and juice of 1½ lemon
 Let the gelatin soak in cold water for about 7 minutes. Squeeze out the water and melt the gelatin in a little boiling water.
 Whip the cream semi stiff. Whip egg and sugar light and airy. Add finely grated lemon peel.
 Pour the gelatin in a thick jet into the egg/sugar mix while stirring. Fold in the whipped cream and lemon juice. Taste to check if the mousse is sweet enough.
 Pour the mousse into serving glasses or into a glass bowl. Cover with plastic wraps and set cold for at least a couple of hours or overnight.
 Serve the mousse with thin strips of lemon or lime peel.
