When winter is at its coldest it is wonderful to cuddle up with a hot and delicious milk drink. Whether it’s at home in front of the fireplace or out by the fire on a hike. Hot milk drinks warms both your inside and outside. Hot cocoa, chai tea, chocolate milk with coriander or mint. There are countless variations you can make. Here’s two recipes for delicious, hot milk drinks  for the long winter here in the north.

Tips for heating milk

The protein content in the milk makes it boil very easily and burn at the bottom of the pan.

Tips to prevent the milk from burning: Use a saucepan with a thick bottom. Warm the milk quickly and stir constantly and move the pan from the heat just as it starts to boil.

Orange and Cinnamon Drink

4 dl [0,8 pt] milk
1 teaspoon ground cardamom
1 teaspoon ground cinnamon
6 tablespoons freshly squeezed orange juice
1 tablespoon sugar

Heat the milk, add the spices and orange juice. Stir. Season with sugar and serve, preferably with an extra sprinkle of spices and / or grated orange peel.

Cocoa with Ginger

3 ½ dl [0,7 pt] milk
¼ dl [4 tablespoons] cocoa powder
1 ½ tablespoons honey, preferably acacia honey
½ teaspoon ground ginger

Mix cocoa, honey and a little of the milk in a saucepan. Heat while stirring. Dilute with remaining milk when cocoa powder is dissolved. Heat to boiling while stirring. Add the ginger. Serve with a little whipped cream.
