Oriental Casserole

You can easily make this delicious casserole with pork and vegetables. The sauce is nice and spicy, and some roasted nuts – peanuts or cashews – adds the final touch to the dish.

Preparation: about 10 min.
Cooking time: about 20 min.

What you need for 4 servings:
500 g [1,1 lb] boneless pork
2 tablespoons butter or margarine
2 leeks
2 green peppers
4 stalks celery
1 tsp salt
1 teaspoon ginger
1 tablespoon flour
3 dl [0,6 pt] water
1 tablespoon soy sauce
1 dl [o,2 pt]  roasted nuts, for example
peanuts or cashews
8 servings:
Double the ingredients,
but use only 5 dl [1 pt] of water.

This is what you do

[1] Cut the meat into strips or dice it.

[2] Rinse th vegetables. Shred the leeks finely. Cut the peppers in two  and remove the seeds carefully. Cut the peppers and celery into fine strips.

[3] Brown the meat in a skillet – a little at a time. Put the meat  into a sauce pan when it is browned.

[4] Fry the vegetables quickly before putting them in the sauce pan. Sprinkle with salt, ginger and flour. Stir well.

[5] Pour the water into he skillet and bring to a boil to combine it with the meat juices and pour it into the sauce pan. Add the soy sauce.

[6] Let the pot simmer at the boiling point – about 20 minutes or until the meat and vegetables are done.

[7] Roast the nuts in a dry frying pan. Sprinkle them over the casserole as you serve the dish.

[8] Serve with freshly cooked, steaming rice and soy sauce for people to drip over their serving.
