the Benjamin Company in 1980

Oriental Turkey Soup

I can’t help spotting gherkins on the picture even though it is not mentioned in the recipe so the choice is yours, trust the picture or the recipe. In my opinion you can never go wrong with gherkins, I simply love the stuff

1 10 1/2-oz. can cut asparagus,
drained, reserving liquid
2 14 1/2-oz. cans chicken broth or
same amount homemade
1 2 1/2-oz. can sliced mushrooms, drained
1/2  cup coarsely chopped onion
2 tablespoons cornstarch
2 tablespoons cold water
2 cups chopped cooked turkey
Dash of pepper
1 1/2 cups shredded lettuce


In large saucepan, combine reserved asparagus liquid, broth, mushrooms and onion. Simmer, covered, 7 minutes. Combine cornstarch with water; stir into broth mixture. Simmer, stirring occasionally, until bubbly. Stir in turkey, asparagus and pepper; heat through. Place 1/4  cup lettuce in each soup bowl; pour soup over lettuce.
