Pancake batter enough for a good stack
3 dl jam or mashed or pureed lightly sugared fresh berries
Fresh or frozen berries, for example blueberries and raspberries
 Whisk together the pancakes batter. Bake thin pancakes, put them on top of each other with jam or mashed or pureed fruit in between.
 Garnish with berries, (see picture). Frozen berries should be added at once, they will thaw quickly on the the hot pancakes. Fresh berries should be added just before serving.
 Serve the pancake cake with ice cream or whipped cream. If the cake are to be decorated with whipped cream, it should be done just before serving.
