4 egg whites
1 teaspoon vinegar
1 teaspoon vanilla
1 cup sugar
1/2 cup oats (quick or old fashioned, uncooked)
Strawberry or vanilla ice cream
Sweetened, sliced fresh or frozen strawberries
Heat oven to very slow (275°F.). Beat egg whites until frothy. Add vinegar and vanilla; beat until mixture forms soft peaks. Add sugar a tablespoon at a time, beating well after each addition. Beat until mixture is stiff and glossy. Fold in oats.
For each meringue, spoon mound of egg white mixture onto greased baking sheet. Make "well" in centre of each. Bake in preheated oven (275°F.) about 45 minutes. Immediately remove from baking sheet. Cool. To serve, fill with ice cream; top with strawberries.
