Peanut Butter Cookies

A cookie recipe found in “Cooky Jar Favourites”
published by the Tested Recipe Institute in 1960

1 1/2 cups sifted flour

1/4 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 cup shortening
1 cup sugar
1/2 cup peanut butter
2 eggs, well beaten
1/4 cup milk
1 teaspoon vanilla
3/4 cup seedless raisins
3/4 cup rolled oats


[1] Mix and sift flour, salt, baking soda and cinnamon and set aside. In a mixing bowl, beat shortening until creamy. Add sugar gradually, continuing to beat. Add peanut butter, blend well. Stir in eggs, milk and vanilla, mix well. Add sifted dry ingredients and stir to mix well. Fold in raisins and rolled oats. Cover and chill 1 hour.

[2] Set oven for moderate, 350° F.

[3] Drop dough by teaspoonfuls on ungreased baking sheets, about 2 inches apart. Bake 15 minutes or until brown. Cool on cake racks.

Makes about 4 dozen.
