Pear Marmalade with Saffron and Chili

A yummy and slightly different marmalade with pear, saffron and chili. The marmalade goes great with  fried meat and it makes a delicious sandwich spread.

1 kg [2,2 lb] mature pears
½ g [0,02 oz] saffron
3 dl [0,6 pt] Lyle’s Golden Syrup or similar
1 piece of red chili
4 dl [0,8 pt] preserving sugar


[1] Peel the pears. Cut them in halves and remove the cores. Cut the halves into thin slices and put them in a saucepan with saffron and golden syrup. Leave the boil under cover for 5-10 minutes.

[2] Rinse and clean the chili and cut it two lengthwise and remove the seeds and membranes, then cut it into very small pieces very small pieces.

[3] Put the chilli and preserving sugar into the saucepan and cook for 2 more minutes.

[4] Pour the marmalade into hot and clean glasses and when cooled store them cold.
