Pineapple Cake

Recipe by Mrs. J. E Eubank Appling, Georgia. This reripe won first prize at a district contest held in Augusta, Ga.

4 cups sifted flour
1/4 teaspoon salt
1 cup shortening
2 cups sugar
4 eggs beaten separately
1 cup milk
3 teaspoons baking powder
1 teaspoon flavouring


Sift flour, measure, add baking powder and salt and sift twice. Cream shortening, add sugar gradually, then egg yolks, milk and flour. Blend thoroughly. Add flavering and fold in stiffly beaten whites of eggs. Bake in layers.

1 No. 2 can crushed pineapple
2 cups sugar
2 egg yolks
2 tablespoons flour

Dissolve sugar with pineapple juice and cook together until it will spin a thread. Rub egg yolks and flour into a paste, mix with pineapple thoroughly. Gradually add the syrup. Return to the stove and cook until thick. Spread between the layers. Cover the top and sides with icing.

1 1/2 cups sugar
1 cup water
4 tablespoons syrup
2 egg whites beaten stiff
1 teaspoon vanilla

Boil sugar, syrup and water together until it forms a soft ball ln cold water. Pour slowly over egg whites, beating constantly. Spread on cake before it becomes firm.
