Pink Picnic Lemonade

A sparkling lemonade perfect for a picnic found on BBC food
Pink Picnic Lemonade

This lemonade will go down nicely with the drumsticks i the last post.

a few handfuls of ice cubes
1 l soda water
a few lemon slices, to garnish
For the syrup:
200 g golden caster sugar
200 ml water
450 g raspberries
juice of 3 lemons
A handfull of mint leaves


[1] Prepare the syrup by placing the raspberries, sugar, water and lemon juice in a large saucepan. Bring to the boil over a moderate heat and cook for 2-3 minutes. Remove and allow to cool a little before pressing through a sieve, collecting the syrup underneath in a bowl.

[2] Allow to cool to room temperature, then cover and chill until ready to serve. When ready to serve, pour 35ml / 1,2 fl oz of the syrup into the base of each glass and top with soda water and ice. Stir well and garnish with mint leaves and a slice of lemon on the rim of the glass.
