Piquant Straws

A snacks recipe found in “Ost i Varme og Kalde Retter”

Piquant Straws

125 g [4,4 oz] (2 dl/0,4 pt) flour
A pinch of cayenne pepper
50 g [1,75 oz] margarine
50 g [1,75 oz] Cheddar cheese, grated
1 egg yolk
2 tablespoons tomato ketchup
2-3 ts of water
Whipped egg for brushing


[1] Sift flour, salt and cayenne pepper in a bowl. Crumble in the margarine. Stir in the cheese. Add the egg yolk, ketchup and enough water to gather the dough.

[2] Roll the dough into a 5 mm / 1/5 inch thick sheet. Brush with whipped egg and sprinkle with paprika. Cut the dough into strips 7 1/2 cm / 3 inch long. Bake on greased baking paper at 200° C / 390° F for 10-15 minutes or until light golden. Cool on a rack.

[3] Place the “straws” nicely in a dish or place them in a glass for serving.

Will make about 50

Variation: Cut the dough into small round biscuits (about 4 cm / 1 1/2 inch in diameter). Cook as above. Spread with cream cheese and sprinkle with poppy seeds.
