Pistachio Buns


Imagine fresh, hot and juicy buns. Now, imagine also that you fill them with a lovely, sweet filling flavoured with pistachios. Delicious, huh? Now your thoughts can become reality with this recipe for fantastic delicious pistachio buns. Enjoy them!

Tip: When you work with buns it is important to remember that all the raw materials you use should be at room temperature. This means that even the flour should stand at room temperature for a while before you start.

What you need:

50 g [1,75 oz] fresh yeast
5 dl [1,1 pt] flour
125 g [4,4 oz] real butter
¼ tsp salt
1 dl [0,2 pt] sugar
15 dl [3,2 pt] flour (approximately)
Pistachio filling:
1 dl [0,2 pt] sugar (approximately)
125 g [4,4 oz] real butter, room temperature
1 dl [0,2 pt] pistachios, coarsely chopped

This is what you do

The dough:
Crumble the yeast in a large bowl. Melt the butter in a saucepan, pour in the milk and heat the mixture to lukewarm, about 37° C / 98,5° F. Dissolve the yeast with a little bit of dough liquid before adding the rest. Mix in sugar, salt and almost all of the flour. Add a little bit at first and then the rest of the flour a little at the time until you have a smooth and elastic dough.

First rising:
Let the bun dough rise under plastic in a warm place for about 45 minutes.

The filling:
While the dough is rising, make the filling. Mix softened butter with sugar and chopped pistachios in a separate bowl.

Finishing the buns.
Cut the dough in half when the first rising is done. Roll out each portion into a thin rectangular sheet (about 60×20 cm / 23,5×8 in). Cut out about 10×10 cm / 4×4 in squares. Place about 1 teaspoon of the filling in the middle of each square. Fold the corners of each square into the middle and press lightly to close inn the filling.

Set the oven to 225° C / 435° F.

Second Rising:
Add the buns on a baking tray covered with baking paper and let rise for about 20-30 more minutes covered by plastic or a kitchen towel.

Brush the buns with a little lightly beaten egg and sprinkle with chopped pistachios. Bake the buns for about 8 minutes. Then cool the freshly buns on a rack.
