It is still high season for picnics here on the northern hemisphere so if the weather is agreeable there is no reason to sit down indoors to have lunch. Pack the lunch and find yourself a nice peaceful spot. Remember winter is back in just a few months – Ted

A 400 g [14 oz] loaf of bread

200 g [7oz] strong cheddar, thickly sliced
7 tbsp sweet pickle
5 thick slices ham
1 apple, cored and thinly sliced
juice of ½ lemon
85 g [3 oz] bag watercress


[1] Cut the loaf in half lengthways and scoop out some of the bread from the middle, leaving a 1–2 cm / 1/5-3/4 inch border around the edge of the bread.

[2] Layer in the cheese and spread with the pickle. Top with the ham. In a small bowl toss the sliced apple in the lemon juice to stop it going brown and arrange over the ham. Pile on the watercress and press on the top of the loaf.

[3] Wrap tightly in clingfilm and leave to press together for a few hours or overnight. Unwrap just before serving.
