Pommes de Terre au Pistou – French Basil Potatoes

Should not be frozen.

About 1 kg potatoes
2 tablespoons butter
2 tablespoons olive oil
2 onions
2 cloves garlic
salt, black pepper
4-5 tablespoons fresh basil


[1] Peel the potatoes and cut them into uniform pieces. Brown them lightly golden in butter and 1 tablespoon oil in a deep pan and sprinkle with salt.

[2] Clean and chop the onions, mix them with the potatoes and cook on low heat until everything is tender. Turn the mixture often so that the potatoes get evenly browned.

[3] Mix crushed garlic with 1 tablespoon olive oil and chopped basil. Pour this over the potatoes. Serve hot with fried dishes of meat, fish or poultry.
