Pork Chops Provençale

Cooking / frying time: Total approx 30 min.
Chops and tomatmos can be frozen separately

4 pork chops
Salt and pepper
Mashed tomatoes:
2 onions
1 clove garlic
1 tablespoon butter, 1 tablespoon oil
1 can tomatoes (450 g / 1 lb)
1/2 dl [0,1 pt] tomato paste
Salt and pepper
basil and parsley


[1] Starting with the tomato puree, clean and chop the onion and garlic and let both simmer in butter and oil until transparent.

[2] Add the tomatoes (without the juice), tomato paste, salt, pepper and 1 teaspoon dried crushed basil.

[3] Mash the tomatoes with a wooden fork and let the mixture simmer, uncovered, for 10 to 12 min.

[4] Fry the chops in butter added paprika to taste in 8-10 min. depending on their thickness. Sprinkle them with salt and pepper and place on a warm serving dish. Add a spoonful mashed tomatoes on each chop and sprinkle with chopped parsley.

Serve the chops hot with cooked rice or warm flûtes and the rest of the mashed tomatoes.
