Pork Tenderloin Medallions

The plates on the pictures in this booklet are divided into two. The top section shows various juicy and tasty dishes made with pork. The bottom part shows various types of exciting accessories that taste very well with the pork.

Top: Pork tenderloin medallions

Cut the tenderloin into 3 cm/ 1 inch thick slices. Fry the slices for 2-3 minutes on each side. Seasoned with salt, pepper and chopped salvie at the end of the cooking time.

Bottom: Couscous Salad

1/2 pk couscous
3 garlic clove, crushed
1/2 liter [1 pt] broth to taste
5 tablespoon olive oil
50 g [1,75 oz] raisins
1 peeled orange, cut into chunks
1/2 chopped red onions
1/2 red onions in wedges
2 tablespoons minced mint
3 mild green or red chillis
8-10 cherry tomatoes
A little grated fresh ginger


Boil the broth with the chopped red onion, garlic and oil. Remove the saucepan from the heat and add the couscous. Let the couscous swell. Fold in soaked raisins, red onion wedges, chili, herbs and orange. Season with salt and pepper. Garnish with lime.
