Portuguese cod is a new exciting way to serve cod.
Serve with boiled potatoes or bread.
Preparation: About 10 min.
Cooking time: Total about 25 min.
Can not be frozen.
1 kg [2,2 lb] fresh or deep-frozen cod in slices
50 g [1,75 oz] butter
1 tablespoon oil
1 can of tomatoes (about 500 g / 1,1 lb)
1 1/2 dl dry [0,3 pt] white wine
1 clove of garlic
2 bay leaves
 Clean and chop the onion and sauté it in butter and oil in a frying pan. Sprinkle with salt and pepper.
 Add the tomatoes (with the juice from the can), bay leaves, crushed garlic and white wine. Boil and let the brine boil for about 15 min. over low heat.
 Place the cod slices inthe pan and cover with a lid. Allow to simmer over low heat for about 10 min. or until the fish is done.
 Serve immediately with fresh white bread or boiled potatoes.
