Portuguese Cod

Portuguese cod is a new exciting way to serve cod.
Serve with boiled potatoes or bread.

Preparation: About 10 min.
Cooking time: Total about 25 min.
Can not be frozen.

1 kg [2,2 lb] fresh or deep-frozen cod in slices
Salt, pepper
50 g [1,75 oz] butter
1 tablespoon oil
2 onions
1 can of tomatoes (about 500 g / 1,1 lb)
1 1/2 dl dry [0,3 pt] white wine
1 clove of garlic
2 bay leaves


[1] Clean and chop the onion and sauté it in butter and oil in a frying pan. Sprinkle with salt and pepper.

[2] Add the tomatoes (with the juice from the can), bay leaves, crushed garlic and white wine. Boil and let the brine boil for about 15 min. over low heat.

[3] Place the cod slices inthe pan and cover with a lid. Allow to simmer over low heat for about 10 min. or until the fish is done.

[4] Serve immediately with fresh white bread or boiled potatoes.
