Rissoies de Camarão – Shrimp Pates From Portugal

3 cl oil (2 tablespoons)
250 g peeled prawns [8.8 oz.]
2 onions
parsley
3 eggs, should be separated
30 g flour [1 oz.]
salt
pepper
500 g puff pastry, it must be tough
[17,6 oz.]

Heat the oil and fry the prawns, onion and parsley. Remove the pan from the heat and add the egg yolks, flour, salt and pepper. Whip the egg whites in a bowl and cut them into the mix.

Roll out the dough into a thin wafer. Cut out circles (about 11 cm [4,5’’]in diameter). Place filling on each circle, in an amount the size of an egg. The dough is folded around well, moisten the edges so they stick better and press tight with the teeth of a fork. Boil in oil until golden brown. Served with rice and half lemons.
