Roll cake is an old classic that never fails to delight. They are juicy
and tasty which makes them loved by both children and adults.
2 dl [0,4 pt] sugar
1 teaspoon cardamom
1 dl [0,2 pt] flour
2 teaspoons baking soda
3 dl [0,6 pt] cream
2 dl [0,4 pt] almonds
2 tablespoons sugar

This is what you do
 Whip the eggs, sugar and cardamom light and stiff. Sift flour and baking powder together and fold it into the egg mix with a spatula. Spread the batter evenly over a baking paper in an oven mould.
 Bake the cake in the middle of the oven at 200° C / 390° F for 8-10 minutes. Place a baking paper on your counter and sprinkle it with sugar. Vault the roll cake onto the paper and leave the mould over the cake until it has cooled slightly. Remove the mould and the baking paper the cake was baked on.
 Whip the cream. Grind the almonds into coarse almond flour in a blender. Mix cream, almond flour and sugar. Spread the filling on the cake and roll it up gently. Decorate with chopped pistachios.
