If you are out on a fishing trip, you can of course make these burgers from self caught trout, char or other fish. what ever you choose they will taste great.
500 g [1,1 lb] skin and bonesless salmon fillets
1 tsp salt
½ teaspoon lemon pepper
½ teaspoon chili powder
oil for frying
 Cut the salmon into thin slices which you then cut into strips and then into small cubes.
 Mince salmon cubes roughly with a large chef’s knife or a sharp hiking knife.
 Mix the salmon with salt and spices, and stir well.
(These first three steps you can certainly make at home before you leave for the hike, but it’s much nicer to do so by the camp fire.)
 Dip a spoon in cold water and form burgers in your hand.
 Fry in oil in a frying pan, campfire griddle or campfire wok for 2 minutes on each side.
 Wash, clean and cut up the salad.
 Server the burgers in warm pita bread with salad and tzatziki.
Equipment: Cutting board, chef’s knife or a sharp camping knife, bowl, tablespoon, wooden spoon, spatula, frying pan, griddle or wok. Or why not a flat thin slab of stone.
