Rouladen or Mock Birds

1 round steak cut 1/4 inch thick
1/4 cup flour
1 teaspoon salt
Sliced bacon
Sliced Spanish oníon
Bay leaf
Soup stock


[1] Cut the steak into pieces about the size of a hand, allowing one for each person.

[2] Sift the flour with the salt and dip the pieces of meat into it.

[3] Place two slices of bacon, two slices of onion and a small piece of bay leaf on each piece of meat.

[4] Roll.the steak pieces up,tuck in the edges and tie with a string.

[5] Dip again in flour and fry in good dripplngs to a deep brown.

[6] Cover with boiling stock, cover pan with a lid and cook until tender, at least one hour.

[7] Remove string before serving.
