250 g [0,55 lb] fresh or frozen string beans
150 g [0,33 lb] smoked ham
150 g [0,33 lb] roast beef
1/2 dl [0,2 pint] pickled onions
1/2 teaspoon tarragon
1 tablespoon vinegar
3 tablespoons oil
Salt and pepper
cress or sprouts
 Clean the fresh string beans. Boil the beans in a little lightly-salted water. (Cook the frozen string beans according to the instructions on the package). Cool.
 Cut away the fat from the ham and cut the ham and roast beef in narrow, not too long strips.
 Mix all ingredients carefully so that nothing falls apart. The ingredients can also be placed in groups on the serving platter.
 Mix the sauce and pour it over the salad. Garnish with cress and finely chopped parsley.
Server with fresh white bread and crispy lettuce strips.
