Salad Eden Rock

250 g [0,55 lb] fresh or frozen string beans
150 g [0,33 lb] smoked ham
150 g [0,33 lb] roast beef
1/2 dl [0,2 pint] pickled onions
1/2 teaspoon tarragon
1 tablespoon vinegar
3 tablespoons oil
Salt and pepper
cress or sprouts


[1] Clean the fresh string beans. Boil the beans in a little lightly-salted water. (Cook the frozen string beans according to the  instructions on the package). Cool.

[2] Cut away the fat from the ham and cut the ham and roast beef in narrow, not too long strips.

[3] Mix all ingredients carefully so that nothing falls apart. The ingredients can also be placed in groups on the serving platter.

[4] Mix the sauce and pour it over the salad. Garnish with cress and finely chopped parsley.

Server with fresh white bread and crispy lettuce strips.
