Scampi Oriental

This is a really nice party dish, which is also nice for the one in the kitchen, everything can be prepared in advance, so that the work that remains only takes 5 minutes.

A common rule for cooking shellfish is that they must not boil too long or too hard. Then they will become tough. This also applies to scampi.

4 servings

24 scampi without shell
1 yellow onion
1 apple
2 tablespoons butter
3 level teaspoons curry
little saffron
1 tablespoon tomato puree
2 tablespoons flour 
0,9 pint heavy cream
salt
shredded lettuce
pimientos (peppers canned fruits)

Chop the onion and apple.

Sauté the scampi lightly in butter with the chopped onion and apple. Sprinkle with curry and saffron. Stir in tomato paste. Sprinkle with flour.

Mix and add the  with cream. Let it all simmer for a few minutes.

Meanwhile sauté some shredded lettuce in a little butter, mix in the peppers (pimientos).

Mix the vegetable with the scampi mix, add salt to taste, and serve with rice.
