Scrambled Eggs with Smoked Salmon, Spinach and Pine Nuts

Salmon and scrambled eggs are classic Norwegian summer food. I have had variations of this dish at more Norwegian outdoor restaurants than I can remember and usually the food has been as expected; Tasteful and delicious.

4 servings

6 eggs
6 tablespoons of milk, water or cream
Salt and pepper
Butter for frying
1 chopped garlic clove
2 handfulls chopped fresh spinach, well washed
4 slices grilled farmhouse bread
12 slices of smoked salmon
4 tablespoons roasted pine nuts

This is what you do

[1] Crack the eggs into a bowl and add milk. Season with salt and pepper and whisk together lightly. Heat some butter in a frying pan and sprinkle inn the garlic and spinach and fry till the spinach collapse. Add the egg mixture. Stir constantly in the frying pan until the egg mixture turnes creamy.

[2] Distribute the scrambled eggs on the bread slices and decorate with smoked salmon. Sprinkle with pine nuts and serve.
