A lefse recipe found on matoppskrift.no
There are certainly more than a hundred different recipes for lefse around in Norway. This one from Løvøy is one of them – Ted
5 dl [1 pt] sugar
5 dl [1 pt] milk
2 teaspoons baking soda
Butter cream made from:
icing sugar, real butter, cinnamon and vanilla
 Whip egg and sugar airy and light and mix in the milk. Add 1 dl flour mixed with the baking soda first. Then stir in more flour until the dough is firm enough to roll out.
 Roll the dough out thinly and cut out round pieces using a plate and fry the the lefse at medium heat on both sides. For large lefse you need a griddle, but smaller ones can be fryed in a dry fryingpan
 Cool the lefse under a damp kitchen towel.
 Before serving, brush the lefse lightly with a cloth dipped in lukewarm water before buttering with butter cream. Then fold them double and cut into nice wedges.
The lefse may be buttered and frozen. They thaw quickly.
