There are certainly more than a hundred different recipes for lefse around in Norway. This one from Løvøy  is one of them – Ted

2 eggs
5 dl [1 pt] sugar
5 dl [1 pt] milk
2 teaspoons baking soda
Butter cream made from:
icing sugar, real butter, cinnamon and vanilla


[1] Whip egg and sugar airy and light and mix in the milk. Add 1 dl flour mixed with the baking soda first. Then stir in more flour until the dough is firm enough to roll out.

[2] Roll the dough out thinly and cut out round pieces using a plate and fry the the lefse at medium heat on both sides. For large lefse you need a griddle, but smaller ones can be fryed in a dry fryingpan

[3] Cool the lefse under a damp kitchen towel.

[4] Before serving, brush the lefse lightly with a cloth  dipped in lukewarm water before buttering with butter cream. Then fold them double and cut into nice wedges.

The lefse may be buttered and frozen. They thaw quickly.
