Sour Cream Waffles

A breakfast recipe found  in “The New Sealtest Book of
Recipes and Menus” published by  Sealtest Inc in 1940Sour Cream Waffles

A rather surprising waffle recipe for scandinavians who do not serve waffles for breakfast, but more like we would serve cakes. A waffle recipe without sugar or other sweetening would of course then seem a little strange to us.

1 cup flour
3/4 teaspoon baking powder
1/4 teaspoon soda
3/4 teaspoon salt
3 tablespoons butter
1 egg
1 cup thick sour cream
1/4 cup milk

Mix and sift the flour, baking powder, soda and salt. Add the melted butter to the well beaten egg yolk and add the sour cream and milk. Stir into the dry ingredients mixing just enough to moisten. Fold in the stiffly beaten egg white and bake on a hot waffle iron. Makes four large waffles.
