Spicy Bacon and Potato Soup

Nothing is better than a hot soup with spicy flavours on cold winter days!

0,5 kg [1,1 lb] potatoes, diced
3 carrots
1 bunch green onions or 1 leek
2 tablespoons olive oil
200 g [0,44 lb] bacon, diced
about. 8 dl [1,6 pt] chicken stock (or water + cube)
2 cans chopped tomatoes
1 teaspoon sambal oelek (hot chilli paste)
1 teaspoon cumin
grated parmesan

[1] Scrub and peel the potatoes and cut them into cubes. Peel the carrots and cut them into slices. Cut the green onions in 3/4 inch pieces or cut the leek into slices.

[2] Heat a saucepan with 1 tablespoon olive oil and fry the bacon brittle. Take it out and put aside on kitchen paper.

[3] Add a little oil in the pan. Saute onions or leeks. Pour in broth and tomatoes and bring to a boil. Add the bacon, potatoes, carrots, sambal oelek and cumin.

[4] Let everything simmer until the potatoes are tender, about 10 minutter. Taste the soup with salt and pepper.

[5] Serve the soup piping hot with bread and a sprinkling of the green of the spring onions.
