The dish may be made with beef, horse, moose or reindeer meat. Select sirloin or tenderloin.
125-150 g meat per. serving, cut in a 2 1/2 – 3 cm thick slices
1 onion, sliced
For the cooking:
Salt and pepper
(Sherry or red wine)
Cooking time: 2-3 min. on each side
 The meat should be from young animals and well hung.
 Beat the meat slices lightly with your hand and form them into nice round shapes.
 Cut the onion into slices, brown it. Brown butter in a skillet. Add the steaks, fry them on both sides. Sprinkle with spices when they are done. cooking time depends on how red you want the meat.
 One can also heat a skillet until it is scorching, place the steaks in the skillet and sear them quickly on both sides. lower the heat, add butter to the skillet and fry the steaks about 2 minutes on each side. Season the steaks and place on warm plate.
 Boil out the pan with a little water, add the sherry or red wine.
 Place the fried onion on top of the steaks and pour the skillet liquids over them.
 Server the steakes with potatoes and boiled vegetables, lettuce, tomatoes or pickles.
