Strawberries & Cream Crepes

I’ve loved thin pancakes like these ever since was a kid. There is a multitude of ways to fill them and this book feature recipes both for appatizers, lunch and desserts. I think I love this book too – Ted

Ingredients
3 cups fresh strawberries
1/3 cup granulated sugar
1 cup cottage cheese
1 cup dairy sour cream
1/2 cup powdered sugar
10 to 12 cooked crepes

Method

Slice strawberries; add granulated sugar and set aside. In blender, whip cottage cheese until smooth; stir in sour cream and powdered sugar. Fill crepes with about 2/3 of creamy mixture and berries; fold over. Top with remaining strawberries and cream.

Makes 10 to 12 crepes.
