Mint kisses, classic Swedish sweets that belongs to Christmas. Not at all difficult to make and appreciated by both young and old. Silky sugar candy flavored with mint and decorated with dark chocolate, oh, so delicious!
6 dl [1,2 pt] sugar (566 g / 20 oz)
2 dl [0,4 pt] water (200 g / 7 oz) – part 1
2 tablespoons of glycose (30 g / 1 oz)
15 drops of peppermint oil
2 tablespoons of water (30 g / 1 oz) – part 2
80 g [3 oz] dark chocolate
 Melt sugar, water (part 1) and glycose. Please use a thermometer to check that the mixture reaches the correct temperature, 117 C / 242,5 F.
 Add peppermint oil and pour the batter onto a slate of stone or silicone mat. Stir to get air in the batter. It’s going to get grainy.
 Add water (part 2). Then heat the mass again. Use two teaspoons an place small round candies of the batter on baking paper.
 Melt the chocolate to 45 C / 115 F and then cool to 31 C / 90 F while stirring. Use a piping bag and place tops of chcolate in the middle of each sugar candy. Let the chocolate set.
Tip: You can put raisins, nuts and other goodies in the chocolate before it sets. Perfect Christmas candy!
