Swedish Vegetable Soup

A classic Swedish soup recipe found in “Kulinarisk Pass”
(Culinary Passport) published by Tupper Ware i 1970

2 leeks
1 onion
3 carrots
1/4 celeriac
3 potatoes
Small cauliflower bouquets
30 g [1 oz] margarine (2 tbsp)
Salt and pepper
1 liter [2 pt] of water
1 vegetable broth cube


[1] Clean the vegetables, cut them into pieces and brown them in the margarine.

[2] Add salt, pepper and cold water with broth cube.

[3] Put a lid to the saucepan and let the soup simmer over low heat for 40 minutes.

[4] Taste with salt and pepper.
