Grilled sweet and spicy chicken skewers that is so easy to make! Great for the campfire or camp grill! Pineapple, peppers, and chicken grilled together to make a perfect meal.
1 – 1.5 lb chicken breasts
2 Green bell peppers
1 fresh pineapple
Chopped parsley for garnish, (optional)
About 12 wooden skewers
Spice Rub Ingredients:
1/2 teaspoon ground red pepper
1/2 teaspoon smoked paprika
1/2 teaspoon ground black pepper
1/2 teaspoon salt
1 Clove garlic, minced
1/4 cup brown sugar
 Soak your skewers in water so that they don’t burn on the grill.
 Cut the chicken breasts into 3 or 4 pieces each (depending on breast size). Toss chicken in the spice rub until all pieces are coated evenly. Let sit while you cut up your green peppers and pineapple.
 Thread your ingredients onto the skewers, leaving about an inch of wood exposed on each end.
 Grill until chicken is cooked through.
Tip: Remember that you can cut all the ingredients at home and put them in separate plastic boxes. You can also mix the spice rub ingredients at home and bring it in another plastic box.
The recipe will work just as well with pork tenderloin.
